Scope
The Baker will accurately and efficiently prepare, portion, cook, and present a variety breads, pastries, desserts. The Baker position will serve as a leader and mentor in guiding and assisting the less experienced bakers and Baker’s helpers. The general responsibilities of the position include those listed below, as well as other tasks and initiatives delegated by the Sous Chefs and Executive Chef.
Primary Responsibilities
- Under the general supervision of the Chef, prepares and cooks foodstuffs in quantities according to menu and number of persons to be served.
- Prepares items from scratch such as breads, rolls, muffins, biscuits, pies, cakes, cookies pastries, and other desserts.
- Check’s production and keeps records to accurately plan production requirements.
- Oversees creativity and prepares all desserts required for all food operations, banquets, specialty orders and to-go orders.
- Sets up, maintains, and breaks down station according to food operating guidelines.
- Tastes all products produced to assess quality.
- Notifies Sous Chef and /or Executive Chef of all product shortages and equipment maintenance issues.
- Prepares and serves items in accordance with established portion and presentation standards.
- Maintains accurate counts on all food items prepared, ensuring no discrepancies in amount of food needed verses amount of food prepared.
- Schedule’s production of all baked goods to always maintain an inventory of fresh baked goods.
- Uses food preparation equipment according to manufacturer’s instructions.
- Cleans and maintains station while practicing exceptional safety, sanitation, and organizational skills.
- Follows defined food sanitation guidelines in preparation of food product and maintaining work environment.
- Measures and mixes baking ingredients using a variety of devices.
- Mold’s ingredients into loaves/shapes.
- Requisitions supplies and equipment as needed.
- May decorate cakes, cookies, pastries, and other desserts.
- Attends training programs as designated.
- Place’s products into correctly prepared pans.
- Regulates the drafts and temperatures of the ovens.
- Removes baked items from ovens and applies appropriate toppings.
- Cleans and sanitizes workstations and equipment.
- Attends training programs as designated.
- Attends all allergy and foodborne illness in-service training.
- Complies with all company safety and risk management policies and procedures and all Sodexo HACCP policies and procedures.
- Participates in regular safety meetings, safety training and hazard assessments.
- Reports all accidents and injuries in a timely manner.
- May perform other duties and responsibilities as assigned.
- Attends training programs (classroom and virtual) as designated.
- Complies with all company safety and risk management policies and procedures.
- Complies with all Sodexo HACCP policies and procedures.
- Participates in regular safety meetings, safety training and hazard assessments.
- Reports all accidents and injuries in a timely manner.
- May perform other duties and responsibilities as assigned.
Competencies
- Must have a Certificate of Baking Qualification from recognized institution and not less than three years experience in a high volume (approximately 1000-5000 persons) construction camp or institutional setting.
- Sodexo may accept a combination of education, training, and experience equivalent to Journeyman status.
- Valid Food Safety certification or provincial equivalent.
- Must have working knowledge advanced kitchen management techniques.
- Should have supervisory experience.
- Must undergo and pass a pre-access Drug and Alcohol test.
- May be required to work day shift or night shift.
